**What we’re eating this week**
We’ve been going in spurts of eating out WAY too much and then making up for it by eating at home. Lately we are on the “eat at home” track, which is good because I have some travel coming up and will be eating out too much again. Kevin asked me to replace our Teflon baking sheets with stainless, and I found these on Amazon:
So far so good. The flat pans are great for baked chicken wings, and we’ve been eating them a couple times a week – so good, yet so Keto!!
I like to make mini-omelet cups in the muffin pan. Just beat some eggs, add cheese, bacon bits, pepper, onion, or anything you like in an omelet, and bake til firm. So good, and they re-heat well so I make a big batch and eat them all week.
**What I’m reminiscing about**
Two years ago at this time, we had just accepted an offer on our house in Illinois, and were searching for a new home in Kentucky. We made so many great memories at that house in Illinois, and Kevin and I agree it is our favorite house of all the ones we’ve owned.
The boys had their first lemonade stand at that house.
We celebrated many changing seasons together there.
We had 5 Halloweens at that house. Here Aiden was in his “Goomba” costume, to go with Cade’s Mario.
Both boys learned to read and started school while at this house. I miss that quiet porch swing – it was a great place to read in the summer.
And here they are on the last morning at this house just about two years ago!
**What I’m loving**
So I’ve been highlighting my hair blonde since I graduated from college. And I love the look of highlighted hair, but I hate how dry my hair gets. On top of that my hair is long (my husband prefers long hair) and tangles easily. For years I’ve been searching for a hair care routine that will help moisturize and smooth my hair, and I think I’ve finally found a routine I love.
First, I am trying to extend the time between washes. While I shower daily (at least), I try to wash my hair at most twice a week. When my roots get oily, I know it is time for a wash. I’ve made it 7 days between washes a few times, but usually it is more like 3-4 days. One key to extending the time has been using dry shampoo. I’ve tried lots of brands, but the one that works best for me is one of the least expensive:
When it is wash day, I use an argon oil based shampoo and conditioner. I’ve tried several of these and my favorite is One ‘n Only Argan Oil Moisture Repair. I never thought I would spend that much on shampoo, but it #1 – it works and #2 – I only use it twice a week so it lasts a LONG time.
The last step is to use a really good detangler on my wet hair before I comb it out. Otherwise, my hair breaks off. I’ve been using this detangler for years now.
**What we’ve been up to**
My job has been crazy busy lately. I’m on some really interesting projects at work, and they’ve been consuming my extra brain capacity and free time this month. BUT I have found time to start a little project with the boys on Saturdays.
They’ve been obsessed with Transformers lately. Every time they go to the store they practically drool. We don’t buy toys for the kids except at Christmas and birthdays as a general rule, so they have been asking HOW they can earn money on their own.
As a starting point, they went through their current toys and found several they’d be willing to sell. I helped them list the toys on eBay. Next, we decided to hit up some local yard sales and see if we can find anything that we could resell on eBay and make a profit. I taught them how to set up a spreadsheet to track their listings, and compute their profit. I’m hoping this will be a good lesson in money management, with some computer skills to boot.
**What I’m dreading**
I’m not dreading much with summer on the way, but the one job I’ve been putting off til nice weather arrives is cleaning up the garage. Kevin has made a lot of progress on it already, since he doesn’t mind working out there in cooler weather. I have boxes that I’ve not touched since we moved in, and it is time to get them taken care of and out of Kevin’s way.
**What I’m working on**
I put the finishing touches on my Spring Capsule Wardrobe earlier this week. This will be my first spring season capsule. I spent a lot of time on it, and just released it to my subscribers earlier this week. It will be available to all on my blog Thursday if all goes as planned.
**What I’m excited about**
Spring, spring, spring!! I am SO ready for warm weather! As someone who is cold-natured, I feel uncomfortable all the time in the cold weather months. Going outside without any coat is one of the best feelings ever in the warm months. Plus I love sandals and just got a pedicure to be ready for sandal weather. I’ve been eyeing this cute pair of wedges:
**What I’m watching/reading**
A friend suggested I check out books by Tricia Goyer recently, so I picked up the first book on the “Chronicles of the Spanish Civil War” historical fiction series, Valley of Betrayal. If you like historical fiction, I highly recommend Tricia’s books.
**What I’m listening to**
I spend several hours a week in the car, usually with the boys along, and we love audio books. We’ve finished up The Hobbit, and are just about to start a history series a friend recommended.
**What I’m wearing**

**What I’m doing this weekend**
Easter is here already. My in-laws are hosting our family gathering on my husband’s side this year. We’ll have an egg hunt and eat lots of delicious food. Most of us are on the ketogenic diet so we’ll have lots of options that I can eat. I’m planning to bring this Cheesy Broccoli Casserole from Yummy Inspirations.
**What I’m looking forward to next month**
We’ve been planning a long weekend trip to the Branson, Missouri area next month. We are still working out exactly what to see and do while there. If you have recommendations, please share them!
**What else is new**
I’ve been following a ketogenic lifestyle since the beginning of the year. For the most part, it has been pretty easy, but occasionally I get a craving for something sweet. Kevin discovered these caramel nut roll bars that have just 3 net carbs, and to me they taste just like a Baby Ruth candy bar. They really hit the spot!
I’ll take one of each of those shoes please! Ha!
